Allagash Curieux was Allagash's first foray into barrel-aging. Curieux is made by aging their Tripel Ale in bourbon barrels for eight weeks in their cold cellars. The aged beer is then blended back with a portion of fresh Tripel. The resulting beer is smooth with coconut and vanilla notes and hints of bourbon.This is the perfect example of what barrel aging can do to a beer.
